I am bewildered by the many people I know who are giving up all bread and grain products and following a gluten-free way of life. I know people who have lost weight and say they feel healthier on this diet -- but it's hard to absorb the idea that something as basic as bread and grains are "unhealthy". Of course, most of us know that we shouldn't eat a lot of highly processed white-flour breads and other white grain foods -- but many people are totally cutting out even whole grains. It seems to me that just about every culture through history has included breads and grain foods as a diet staple. How did grains suddenly become "unhealthy"? Is this just the latest food fad?
