I got the book in the video off of Amazon used books.
I also go to the 'Cultures for Health' web site. They have many sourdough starters. I didn't know there were so many. I 've got the Italian one in the fridge right now. I've gotten kefir and kombucha starters from them, too.

Jim Lahey is the one who's recipe for no-knead bread I followed forever....I think he has a bakery in NYC.....now I am on to the sprouted breads by Foods for Life, the Ezekiel breads....available in both Publix and Whole/Love Foods.....not a big bread eater myself...the Jim Lahey breads are a great gift.....

I would suggest you read "Wheat Belly" and "Grain Brain" written by a cardiologist and neurologist. This is quite a controversial subject and everyone must decide for her/himself, but I have stopped eating bread.

You can bake bread without white flour. That's the point of learning to make it yourself.

Bread eaten occasionally is not bad. A piece crusty sourdough w/ a minestrone soup...or sugar-free jelly....Humm! Where people get into trouble, which results in a ton of NY Times best sellers (!), is the "N".....
Bread N butter
Bread N cheese
Bread N meat
Bread N oil
Mix a starch with a fat and/or protein...that's where you get into trouble. Just pick the least processed loaf & check the sodium grams.

I definitely don't think that bread, in general, is one of the better choices. It's not quite to the level of toxicity as refined sugar or caffeine. But it's not a particularly healthy choice either.
If you can get a 'whole grain' that's the best choice, IMO. Whole wheat is just like one tiny iota better (if at all) than white bread. But whole grain is a much better choice.
I would also say that 'in moderation' is the rule to go by.
For me, bread is probably one of the worst choices because I have a severe esophagus condition. Whenever I eat bread it seems to get balled up, down at my esophagus, and I usually have to bring it back up. Sometimes that happens with meat too but with bread I have to be super careful. Consequently, I consume breads VERY infrequently. I don't know what it is about bread that the esophagus seems to despise, but it makes its point very clearly.
Now and then I can get away with it, however.

It's not as sour as San Francisco but there's ways to manipulate it. They have starters for different grains, too. Lot's of good info at the sight. If you sign up for the newsletter you'll get monthly specials and access to the elibrary.

It's about moderation. I don't eat bread anything normally, but put any fresh baked in front of me with real butter...oooh baby! So I only have it when eating at restaurants (which is rare) or when my son's friends mom sends some home with him. She makes home made about every day!
