Get out that Masterbilt Smoker and pop in two cornish game hens, some mac and cheese, make a salad and call it a day.  I live in Florida, a widow, and use mine all the time for fish, chicken, ribs, mac and cheese, scalloped potatoes - both white and sweet potato, I make up a lot of my own recipes and make enough to last for a few meals.  Also corn on the cob is sooooo good.

Natural no nitrates ham or chicken deli meat on wheat bread with a little veggie mayo and a sliced tomato and avocado on it!  LOVE these.

 

Farro or other grain or rice salads with tomato and cucumber, onion, salt and pepper and a very light lemony dressing with any of your favorite herbs.  Eat as a side or dump on some tuna or chicken for a complete meal.  Some good feta cheese is wonderful too.

 

Watermelon and feta salad!

 

Mango, avocado, red onion and cherry tomato salsa, eat with chips and ham slices--cold! 

 

Corn, black bean, celery, red bell pepper and onion salad with Italian dressing and chicken--all cold.   If you love cilantro like I do, LOTS of that!

Summer for me usually means seafood or chicken on the grill, served over a salad or with a side of grilled veggies.  I will also do a cheese/fruit platter and have on the deck with a nice glass of wine! 

 

I find winter easier to plan - use my slow cooker all the time, and that generally makes so much I have meals for the week or can freeze.  But tend not to use slow cooker in summer.
