I am SO tired of trying to think of what to fix for dinner for me and DH....we are not big eaters and winter cooking is usually not a problem, we like comfort food and that is easy.

 

Summer cooking.....ugh I am tired of BLT, salads.  I have picked up sub sandwiches at the grocery which are usually pretty good.   Some evenings we just have cheese and crackers but if anyone has a couple of ideas that are easy and not heavy, I 'd love to hear what you prepare.    Once strawberries are in season we will do shortcake a few times.

 

As we have gotten a bit older we eat less but I still need to prepare 'somethig' to put on the table.

 

On Saturday or Sunday we generally head to the city and have a large meal, dh wants his steak.

Cold boiled shrimp with - cocktail sauce or another dip on a bed of lettuce and other veggies

Certainly understand your pain. Thinking, planning, preparing meals is a real chore. However, for me, summer is the best time. With so much fresh,seasonal produce it's much easier to get excited about eating. Try going to your local farmer's market for inspiration.

I'm in the same boat, @Mom2Dogs. I made a big container of chicken salad the other day, for sandwiches.

And then I made egg salad and I saw online somewhere the idea to put avacodos in it. OH Boy. That was so good. I used about 6 boiled eggs, one avacado, a couple big spoonfulls of ******e plain greek yogurt and a couple dollops of low cal mayo and it was pretty yummy, if I say so myself.

 

I think today I am gonna make some weight watchers chicken tortilla soup, its easy and lucky for me, dh doesn't mind leftovers.

I grill up several chicken breasts and use them in salads, wraps, quesadillas, etc. I also keep some tuna salad to use in sandwiches or to have with crackers and a small salad. I try and keep some “fixins” in the fridge to add to our salads...such as grilled corn, water chestnuts, olives, feta cheese and a variety of different dressings helps too. I bake up several baked potatoes and keep them on hand. Adding some cheese and broccoli is a nice meal and adding some chili and shredded cheese is a quick meal. There is a new item that is already prepared pasta in a pouch....those are great to make a quick pasta salad or sauté some fresh veggies and add Parmesan cheese and fresh parsley for a quick side dish to some grilled fish. Just having some prepared items makes it easier and less stressful.

Chicken salad - I cheat and make it with a rotisserie chicken so I don't have to turn on my oven. I likethe Whole Foods Sonoma Chicken Salad and found this recipe online: http://www.myrecipes.com/recipe/whole-foods-sonoma-chicken-salad. You can swap low or no-fat Greek Yogurt for the mayo.

 

Tuna - I like regular tuna or tuna salad with pasta. Whole Foods sells an amazing prepared tuna with onions and cranberries.

 

Salmon - my grocery store carries salmon patties with cranberries and gorgonzola. They are amazing. I like them with rice or on a bun with some lettuce and a little mayo. I love spinach and mixed greens with candied walnuts or pecans, dried cranberries, and feta cheese crumbles. You can add apple slices (red or green both work!) if you like. I like a raspberry vinagrette with it and find I don't need much dressing with the sweet tart of the cranberries and the creaminess of the feta cheese.

 

Spinach, strawberries, pecans or slivered almonds, and avocados also make a fantastic salad that's a notch above the standard.

@Mom2Dogs@I like microwaved baked new potato with cottage cheese,chopped green onion and sometimes bacon bits.

i also like yo slice cucumber and top with ham and cheese..grapes on the side.

Another vote for egg salad sandwiches.  I also will make a bowl of tuna salad - 2 cans of tuna which I add lt. mayo, dill relish, onion, celery, sometimes a couple chopped boiled eggs - I'll toast the bread, then add some grated cheddar cheese (microwave till the cheese it kinda melty), put a big dollap of tuna salad on top - good stuff!  Pasta salads are another easy/light meal to consider as well.

Microwave potato bar

Quesadiila with anything you want

Seafood (microwaved even)  no breading, but lemon n butter

Microwave broccoli with diced ham and melty cheese

Pasta salad with herbs lemon and  cherry tomato

Rotissere chicken tacos

Meatball subs

Spaghetti squash spaghetti

Pre made flat bread or foccacia with prosciutto fig and goat cheese

Stir fry

I know I get tired of trying to figure out what's for dinner. Why is that my job? LOL!!! I can eat a salad plus some fruit this time of year. DH still wants a meal or what I call too much food.

We had chicken fried steak dinner at a restaurant Tues that we heard was really good. DH ate all his & I had a to go box with enough left for another meal.

It was probably the most tender fresh homemade chicken fried steak with gravy I have ever ate. We only eat that once or twice per yr. LOL!!!
