I had a couple red beets hanging around from  clearing out my refer yesterday and decided to try to pickle them---was pretty easy--I roasted them in the oven and then made the pickling brine--cut them up and poured the liquid over top and into the refer for a few days---was very easy to do--  will let them sit today and will try them tomorrow---want to try this with other veggies like carrots and beans---pickled stuff is good for your gut, I hear. Will report back.

I buy plain canned beets and pickle them.  I like my flavor better than the ones you buy.  One of my favorite snacks.

 

I sometimes save my sweet pickle juice and use it for the beets.  Delicious!

 

Raw white or sweet onions pickle nicely also!

@Zhills    Ever throw in hard-boiled eggs to that beet pickle juice?   (I grew up in a Depression era household -  everything that could be reused got reused!)

@millieshops I always add the hard-boiled eggs when my beets are used up. My hubby's favorite! If you're PA "Dutch" you are eating pickled eggs for sure! I have tried adding the eggs while there are still some beets in the jar, but it ruins the flavor of the beets IMO.

My method for pickling is very easy.  I like sweet pickles.  After I finish a jar, I drain a can of sliced beats, add them to the jar of pickle juice and let sit a day, and like magic I have pickled beets.

And they taste so much better than the already pickled ones do!

I love pickled beets and love to put them in a garden salad and I use the juice instead of salad dessing...I also will add  the leftover pickle juice to canned beets.  I like the canned beets better and add my pickle juice or make my own i instead of the store bought pickled beets.  Now I need to go fix some pickled beets..LOL

No I never added h/b eggs to those juices -- but in our ramen take out last night, had an egg that was marinated in soysauce or something, that was amazing. I do like the canned beets tho and maybe will do that the next time--will report back. Today we can eat my beets!
