My go-to is Deviled Potato Salad.  Got the recipe years ago from Hellman's.

 

1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise

1/3 cup Hellmann’s® or Best Foods® Dijonnaise™ Creamy Mustard

1 tablespoon cider vinegar

1 teaspoon sugar

1/2 teaspoon salt

2 pounds potatoes, cooked, peeled and cubed, (about 5 cups)

1/2 cup chopped celery 

1/3 cup chopped red onion(s)

2 hard-cooked egg(s), coarsely chopped

 

1. In large bowl, blend mayonnaise, creamy dijon mustard, vinegar, sugar and salt.

 

2. Add potatoes, celery, red onion and eggs; toss gently. Cover and chill.

This recipe is for a cooked dressing for potato salad.  It is exactly the one my family  has used my entire life.   

 

When I'm making a small bowl of potato salad, I do a quick dressing of mayo, mustard, sugar, celery seed and vinegar, but for a large extended family size bowl, I make this cooked dressing.  

If you want a safer dressing to use for picnics, etc., this recipe is perfect.

I also prefer to make a cooked potato salad dressing. Thanks @HLP .
