Daniel Mancini's Tuscan Skillet Chicken

For some reason I get Daniel Mancini's recipes on my FB feed. This one showed up today, and it looks good. I LOVE olives of any kind! For us, I would probably use boneless, skinless chicken thighs.

 

Tuscan Skillet Chicken.
 
For this recipe I am using skin on thighs, but use the chicken you love. Everything happens in one skillet from cooking to serving and we all love that. Enjoy this recipe, it's a good one
You’ll need
•6-bone In chicken thighs
•1-cup of chicken stock
•1/2-cup dry white wine
•1-tsp dry thyme
•1-cup pitted green olives
•4-garlic cloves
•1-shallot sliced thin
•2-tbs olive oil
•2-tbs butter
•1-lemon sliced
•Salt
•Pepper
1-Best to use a non stick skillet
2-Season the chicken with S&P
3-Heat the olive oil in a skillet and brown your chicken on both sides remove to a plate
4-Add the shallots, garlic sauté for two minutes.
5-Add the wine and deglaze the brown bits from the skillet reduce the wine to half (use stock if you are not using wine)
6-Add the chicken back skin side up
with the stock, thyme, olives, lemon slices bring to a boil.
7-lower the heat to a simmer, cover and continue to cook for 30 minutes
8-Remove the chicken to a plate, add the butter and sauté it all together to create the sauce
9-add the chicken back and spoon the sauce onto the chicken then serve
I serve this dish with a nice rustic crusty bread to sop up the sauce it’s delicious.

@PA Mom-mom   Thank you for sharing this.  Sounds very flavorful.   I'm always on the hunt for new takes on chicken.

Same here.  I've recently made 2 new to me and really good chicken dishes, especially love the one pan cooking. 

Martha Stewart's Pan-Roasted Chicken with Za'atar Potatoes & Greens (Kale)

and

Blue Jean Chef - Meredith previously on QVC - Lemon Chicken Skillet Dinner with Orzo & Spinach

Thought both were great.  Delicious.

@rockygems123   Thank you for referring to those two recipes.  I think I have Za'atar in my pantry supplies.

 

With meat prices still rising I am relying on chicken more than ever but it gets boring unless I can jazz up my routines for cooking it.
