looking for my pie recipe. help!

this is a older recipe. maybe '70's? graham crust. filling is pumpkin, spices, pudding?, and marshmellows. with whipped cream folded in.

it makes a tall fluffy pie, and after the pie sits overnite, the marshmallows soften. super yummy. I have been on taste of home, kraft, and cooks recipes.

I could probably wing it, but now i'm thinking about maybe the pudding??? brain doesn't function as well any more.

anyone remember this one?

Marshmallow Pumpkin Pie

  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons butter, melted
  • 1 cup pumpkin puree
  • 1 10-ounce bag mini marshmallows
  • 1 teaspoon cinnamon
  • 1 cup heavy cream
For the crust:
  1. Mix graham cracker crumbs, sugar, melted butter or margarine, and cinnamon until well blended. Press mixture into an 8 or 9 inch pie plate
  2. Bake at 375 degrees for 7-10 minutes. Cool.

For the filling:
  1. In a medium saucepan, combine pumpkin, marshmallows and cinnamon over medium-low heat. Stir continuously until marshmallows are completely melted. Chill pumpkin mixture in the refrigerator for about one hour.
  2. Once the mixture is nearly chilled, whip the heavy cream with an electric mixer on high speed until soft peaks form. Set aside.
  3. Beat pumpkin mixture with an electric mixture until slightly fluffy, about 1 minute. Fold in whipped cream, and spoon mixture into crust.
  4. Cover and chill until firm, about 2 hours.

similar. thanks for the effort. mine has the mellows folded in with the pumpkin and whipped cream. then they get soft overnite. you can see the whole mini marshmellows in the pie.

NO BAKE PUMPKIN PIE

Pumpkin Pudding

Ingredients:

1 (15 oz) can Pumpkin

1 Store brand Vanilla instant pudding, using only 1/2 the

milk as directed on box

1 Tub of Cool Whip

3/4 teaspoon Pumpkin Pie Spice

1/4 cup white Sugar

3/4 cup brown Sugar

2 cups Mini Marshmallows

1 Graham Cracker Pie Crust shell broken up in pieces.

Instructions:

In a large bowl mix the pumpkin with, pumpkin spice, white sugar, brown sugar and the prepared pudding, then lightly mix in the Cool Whip and marshmallows.

Note: If you do not want the graham cracker pie crust, break up a few cookies and mix them in just before serving, or if you prefer, bake a frozen pie shell per package directions, let shell cool then add it to the pumpkin mixture by breaking the pie shell into pieces and mixing it into the cooled pumpkin mixture just before serving.

Makes 8-10 pudding servings or one pie.

thanks Z, its a icebox pie. your recipe is close. no 1 cup of sugar for sure. everything else is close. I guess i'm going to have to go back to my storage shed, and dig out the old books.
