My late mama used to make a Prune Cake every Christmas. It was very unhealthy so I guess that's why we only had it once a year. I think I remember her saying it had 2 cups of oil in it and a ton of sugar. And the icing was not the typical whipped icing. It was white but not fluffy. She would pour it over the cake. And when the frosting "set" it was be kind of hard and breakable. I'm not sure if this makes any sense but I would so appreciate your help. Thanks!

I don't think the sauce here sounds like your mother's, but maybe this will be a start for you. Good luck.

Jack Nicklaus' Favorite Prune Cake with Sauce

2 c flour
1 1/2 c sugar
1 t baking soda
1 t salt
1 t cinnamon
1 t nutmeg
1 c vegetable oil
1/2 c buttermilk
3 eggs
1 c stewed prunes
1 t vanilla

Sauce:
1 c sugar
1/2 c butter
1/2 c buttermilk
1 t soda

Sift together four, sugar, soda, salt, cinnamon, and nutmeg. Add oil, buttermilk and eggs; mix well. Stir in prunes, nuts and vanilla. Pour into a greased and floured 9 x 13-inch baking pan. Bake in a 350 deg. preheated oven 35-40 min. or until done. Test with a toothpick.

When cake is done, make the sauce. Combine all ingredients in a saucepan and bring to a boil, stirring. Pour sauce over each service of cake.

Idea: double this recipe and bake half the batter in a loaf pan and when cooled, slice into four or five layers and then spread with a good marmalade or a good cherry preserve then restack, let set and slice and serve with the sauce or a good stiff whipped cream. Rich but delicious!

Grandma Iny’s Prune Cake

Description

I was fortunate enough to happen upon this recipe for my great-grandmother Iny’s Prune Cake a few years ago. Written by her frail, small hands, the recipe’s simplicity appealed to me. It’s probably in my Top Five Recipes of all time.

And it would make Grandma Iny so, so happy I’m sharing it with you.

Ingredients
  • FOR THE CAKE:
  • 1 cup Prunes
  • 1 cup Sugar
  • 3 whole Eggs
  • 1 cup Canola Oil
  • 1-½ cup Flour, Sifted
  • 1 teaspoon Baking Soda
  • 1 teaspoon Nutmeg
  • 1 teaspoon Allspice
  • 1 teaspoon Cinnamon
  • 1 cup Buttermilk
  • 1 teaspoon Vanilla Extract

  • FOR THE ICING:
  • 1 cup Sugar
  • ½ cups Buttermilk
  • ½ teaspoons Baking Soda
  • 1 Tablespoon White Corn Syrup
  • ¼ cups Butter
  • ½ teaspoons Vanilla
Preparation

Preheat oven to 300 degrees.

Cover prunes with water. Bring to a boil and cook until soft and mashable, about eight minutes. Remove from heat, drain water, and mash on a plate. Set aside.

Mix together oil, sugar, and eggs. In a separate bowl, sift together dry ingredients. Combine wet and dry ingredients, add buttermilk and vanilla and stir gently until just combined. Throw in the mashed prunes and stir gently to combine. DO NOT OVERMIX!

Pour batter into buttered baking dish (9 x 13 or so) and bake for 35 to 40 minutes. DO NOT OVERBAKE OR IVY WILL PADDLE YOUR BOTTOM.

While cake has five minutes remaining, make the icing:
Combine all icing ingredients in a medium saucepan over medium heat and bring to a slow boil. Boil without stirring for 5 to 7 minutes, or until icing starts to turn dark. Do NOT allow icing to reach soft ball stage; icing should be caramel in color, but not sticky like caramel. Icing should be easily pourable.

Remove cake from oven and pour on icing immediately.
Allow to rest on the counter. Serve warm.

NOTE: There is absolutely zero “prune effect” associated with this cake. The end.

2 cups self rising flour

2 cups sugar

1 tsp each allspice, nutmeg, cinnamon

1 cup oil

3 eggs

1 (7 ¾ oz) junior baby food jar prunes

1 cup pecans

Combine sugar, flour and spices. Beat eggs then add oil, prunes and nuts. Add dry ingredients and pour into a 10" tube pan. Bake 350 for 1 hour.

This cake is wonderful. The spices and moistness will make it one of your favorites. Even if you don’t like prunes, you will love this cake.

1 cup pitted prunes, chopped (I used 25 prunes cut in about six pieces each)
1 cup buttermilk
1 cup oil (I used Canola)
1 1/2 cups sugar
3 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon nutmeg
2 teaspoons vanilla extract

I do not use a mixer with this cake. You will need 3 bowls, 1 large mixing bowl and 2 smaller bowls. Put your chopped prunes in one of the small bowls, cover with the cup of buttermilk and set aside. In the large bowl add together the oil, sugar, and eggs mixing well with a spoon. In the other bowl combine the flour, soda, salt, cinnamon, cloves, allspice, and nutmeg and use a wire whisk to mix well. Pour the prunes and milk into the large bowl with the sugar, eggs, and oil. Add the dry ingredients and mix well with a spoon. (I use a wooden spoon). Add vanilla extract and mix. Spray a 9 x 13 cake pan and add the batter. Bake in preheated 325 degree oven for 45 to 50 minutes or until the center of the cake is done. Add the topping recipe below while still warm.

Topping for Prune Cake
1/2 cup buttermilk
2 tablespoons dark corn syrup
3/4 cup sugar
1/2 teaspoon baking soda
6 tablespoons butter or margarine
1 teaspoon vanilla extract
Combine all the ingredients in a pan and bring to a boil. Poke holes in the cake and pour over the cake while it is still warm. (I have just heated this in the microwave instead of doing it on top of the stove).

Oooh, Bamagirl, that cake looks absolutely delectable! OP's description of the cake sounded intriguing until she got to the part about the white frosting. However, I could probably tolerate that glaze--and by "tolerate," I mean wolf it down! Wink
