Hi ladies. I don't post often on this board but get a lot of ideas from you that I bring to my kitchen. I am hoping that I can get some ideas from you about what to do with large amounts of zucchini and summer squash. I have been slow simmering in tomato sauce and eating with parmesan cheese as a light dinner. I've made frittatas and zucchini bread. I make a "zucchini-heavy" stir fry and add to soups. But I'm getting tired of it and it is growing up a storm. What do you do with it that uses large quantities and/or somewhat alters the flavor to make it "different?" Also, how do you freeze it (already cooked or raw chunks?). Thank you for your help with this - I am able to give some away but still have excess.
