I cut them into very small bite sized squares and serve as appetizers. I always have an empty platter. Everyone really loves them. Oh yes they also freeze well.

@LdyBugz Hi!  It's not a quiche texure.  I would describe it as a moist bread.  It can but cut into squares.  It comes out pretty thin.  I've tried to make it in a 9x9 instead of 13x9 and ended up with a raw middle.

Sounds very good.  However, Bisquick is not good for me, is there a substitute?

I'm not sure what's a good bisquick replacement!  I usually buy the lite version.

I just googled zucchini squares and a Bisquick recipe with a photo came up.  I wish I knew how to post it here but it's easy to find.  They look delicious!  Thanks for posting the recipe.
