Zucchini Casserole

1 1/2 lb ground beef

1 onion, chopped

salt, pepper, garlic powder

Brown ground beef with the onion. Sprinkle with salt, pepper and a little garlic powder. I always just estimate the amounts. Drain.

Add:

2 zucchini chopped, peeled or unpeeled

3 tomatoes,chopped or l large can of whole tomatoes

Bring to a boil and reduce heat; simmer for 30 minutes.

After simmering for 30 minutes, stir in 1-16 oz sour cream and stir. I use the light sour cream.

Lightly spray a 9x13 baking dish.

Put a box of seasoned croutons in the bottom of casserole dish.

Pour ground beef and zucchini mixture over croutons; spread out. Top with shredded cheese of your choice. I like to use Colby Jack.

Bake at 350 for 45 minutes.

****You can also make two smaller casseroles and put one in the freezer. If you make it in a smaller pan, lessen the baking time.****
