Getting close to zucchini time in our neck of the woods.  I post this just about every year for those of you that have not seen it.  It is my favorite go to zucchini recipe.  I hope that you like it as well.

 

 

ZUCCHINI BAKE

 

 

3 cups thinly sliced zucchini

1 cup Bisquick

½ cup chopped onion

½ cup grated Parmesan cheese

2 tablespoons chopped parsley

½ teaspoon salt

1 clove garlic, chopped

½ cup salad oil

4 eggs, beaten

 

 

 

Mix together in a large bowl. Pour into a 13X9  inch pan.  Bake at 350 for about ½ hour or until lightly browned on top.

Sounds good. I just got on here to see if there were any squash recipes Smiley Happy I will have to try this out later this week.

I like anything zucchini.  I may even be able to make this. Smiley Very Happy

Sounds delicious! Can't wait to try this recipe. But need clarification about the ingredient: 1/2 cup salad oil. Do you mean vegetable oil?

Yes, it is delicious!  I use Canola oil but veggetable oil is fine also.  I hope that you get a chance to make it.
