Hi Zhills, if you have Wholefoods near you, they sell spinach or sundried tomato tortillas. They are excellent to make wraps and are wheat and gluten free. I gave up all that contains gluten a few years ago. I use these tortillas either in my favourite mexican dishes or to make wraps.

You'll love this--it's absolutely delicious, so refreshing, and comes together in no time flat!
Turkey Salad
8 oz. deli smoked turkey, sliced thick (in 4 pieces), julienned
1 head Romaine lettuce, torn in small pieces
3 peaches, (or nectarines or apricots), sliced
2 celery ribs, sliced crosswise in 1/4" widths
1/2 c. red onion, sliced
1/2 c. walnuts, toasted
feta cheese (5-6 cubes)
Dressing: juice of 1-2 limes, 3 Tbsp. olive oil, salt (optional). Toss with salad ingredients. Enjoy!

I also like a nice thick rich garlicky gazpacho; it makes a meal.
And I like to serve chillled strawberry soup along with some chicken salad in a cantaloupe.
Corn and black bean salad with all the trimmings is a good meal, too.
In the fridge during the summer I like to keep several kinds of lettuce, arugula and spinach, cilantro, hard boiled eggs, a variety of cheeses and cottage cheese, grilled chicken, ham, and all the summer veggies that can fill out a meal, cucumbers, celery, radishes, carrots, avocado, sometimes jicama, and fruit.
So, there's infinite variety of possibilities. Sometimes I think Mexican, sometimes Italian, sometimes Asian, and often just plain old salad
I like Good Seasons for dressings, and Trader Joe's carry some nice fat free dressings that are amazing; their cilantro is my favorite.

Pasta salads are my absolute favorite food. in the summer I also will get a rotisserie chicken at the grocery store and make a big tossed salad with the pieces of the chicken on top. (in Pittsburgh they also serve these in restaurants with french fries on them).

My favorite meals when it is really hot are composed salads. Love a cobb salad or a crab louie with avocado and hard boiled egg (if crab is too expensive I opt for shrimp).

it is even too hot for the crockpot sometimes! I buy a rotisserie chicken at Costco and a spinach salad that is ready to go from the deli section there; DH and I can eat several meals from these without cooking anything.
