The term "Italian sandwich cookies" is a broad, American English description used for various traditional Italian cookies that involve two halves with a filling.

My mother used to make little sour cream pastries filled with jam. Delicious.

 

What I would give to be sitting at the counter with her enjoying one now....Heart

My mother's Russian Tea Cookies.

She would "hide" them until Christmas and of course my sister always found them and we would each sneak 1 together!HeartHeart

My favorite cookie: We call them "clothespin cookies", they are known as lady locks, also. A light, flaky layer filled with a creamy, thick filling.

@KatieB  This is my mother's recipe for these treats:

 

2 sticks butter

1/2 cup powdered sugar

1 1/2 tsp vanilla

1 tsp salt

3/4 cup almond flour

2 1/4 cups flour

 

Beat butter, sugar. vanilla, and salt with electric mixer in big bowl.

Beat in almond flour, then regular flour.   

Roll dough into 1-inch balls and place 1" apart on parchment-lined baking sheet.

Bake in 325-degree oven until barely browned around edges, 15-20 minutes.

Let cool on sheet for a few minutes.

Roll in 1 1/2 cups powdered sugar in small bowl, then place on rack to finish cooling.

Roll again in bowl of sugar when cool.
