To finally get back to you, the roast was good and the gravy excellent. I didn't realize this was a tougher cut of beef and I expected more pull apart beef. It was tender and I cooked it 2.75 hours instead of longer but I wish I had cooked it even less. All in all it was good!

I make my roasts in crockpot.

Less tender cuts will have much less fat and need longer cooking times with the addition of liquid.  We make servings more tender with making the slices thin.

 

If you want more pull apart, try a beef chuck roast.

Recipes dot Com  I do cut away all of my visible fat.  I hate that fat ring that forms around the edge of the pan!  ICK!!!
