What Is Your Favorite Pot Roast Recipe?

I have two, actually!  

 

The first one, our sons called "red roast'.  My step sister used to eat cold for breakfast when we were growing up!

I do it in a large baker covered tightly with foil, or you could get  an aluminum baker at the grocery store.

 

Pot Roast And Vegetables

 

 

Chuck Roast (all fat trimmed) about 3 lbs.

 

4 potatoes cut across into ¼ in circles

8 carrots, peeled and cut in 3 in sticks

2 large onions, cut into large 4ths

2 Cans tomato soup

3/4 can water

Worchestchire Sauce

Garlic.

 

Set oven to 350 degrees

Spray deep baker

Trim fat from roast

Add Carrots cut in small sticks,  thinly slice potatoes across, and cut Onions into 1/4th, arranging around roast.

Pour  the tomato soup and water over everything

Sprinkle with Worcheschire sauce

Sprinkle garlic to taste.

 Cover tightly and bake for about 3 hours.

Reheats beautifully.

 

The sauce should be medium thickness.  You may need to cook with the top off for a little while.

 

 

Mushroom Roast is one of my favorite because of the mushroom gravy and the spice which pair extremely well.

 

Mushroom Roast

 

 

Rump  or Sirloin Tip (I do 5 lbs)

2 Cans mushroom soup

2 Pkg Lipton Dry Onion Soup packets

1 package sliced fresh mushrooms.

2 tsp. Thyme

2 Tbsp. parsley

2 Tbsp. Steak sauce

2 Tbsp. Worchestchire sauce

 

Cut off fat and place roast in deep casserole.

Pour mushrooms over.

Mix all remaining ingredients and pour over.

Cover as tightly as possible.

Bake at 325 degrees 3 hrs.

You may need to thicken the gravy if the roast has a lot of juices.

 

Cut in thin slices.

 

You really want mashed potatoes or rice with this one.

 

Sometimes I add water and reheat in the crock pot all day.

@ECBG   This is my favorite recipe and I use a very small roasting pan with lid.

 

Roast Beef  salt & pepper roast, carrots and potatioes

1 bag small carrots  (they come cleaned already_

2 white potatoes cut up

1 package Liptons Onion Soup Mix.  Take the mix and pour over the vegetables and lastly some on top of the roast.  Add water to cover the veggies.  Put lid on and bake.

 

The onion soup mix gives this so much flavor that you don't need to cut up onion unless you want to.

 

Bake @ 325 degrees for 3 hours.  When the temperature is lower and you slowly cook it, the meat is extra tender.  My mother told me about a loer temp.    Enjoy.

@Katcat1 Looks delicious!  Your mom was right about the heat.  I taught Foods and Advanced Foods, although, my Interior Design classes were where the majority of my extra time was spent.

 

I do my whole, stuffed turkey in a bag at 325.  You wouldn't believe how moist it is even cold!

@ECBG @Katcat1   Perfect  time of year for pot roaast.  Thank you for the recipes.  Listed below is one I acquired that has been circulating the U.S. for years.

 

                               Three Seasons Pot Roast

                  Also Known as Three Packet Pot Roast

 

3 to 4 lb. chuck roast, dredged in ground black pepper & flour

2 cups boiling water

1 envelope brown gravy mix--McCormick is good 

1 envelope Good Seasons Italian Dressing mix

1 envelope Hidden Valley Ranch Dressing mix

 

Brown chuck roast on all sides.  Place it in a slow cooker and mix the three envelopes of mix in the water, add to cooker, and cover.  Set to low and cook for six to eight hours.

 

You can add sauteed fresh mushrooms and onions.  You can add some cut up chunks of carrots, parsnips, and potatoes.  Or mash potatoes as a side or serve over noodles.  The gravy from this combination is delicious.  I thicken it on the stove top at the end before serving.

 

You can cook on the stovetop or in a pressure cooker as you would with any other chuck pot roast recipe adjusting for length of time and adjusting the volume of liquid.  I have prepared it each of these ways and the flavor is excellent with any of these methods.

I always make a traditional chuck roast recipe but I made 

Chef Michael Symons "Mom's Sunday Pot Roast"...it was so delicious, in fact, I froze the leftovers. Gonna be tomorrow nights dinner.

 

He did the recipe on his FN quarantine series🙂

It's not really "pot roast" what I do and not a recipe I follow.  I use a sirlion tip roast and these beef crock pot packets (2).  I like to start everything hot so I make the sauce/gravy from the packets first and put in crock pot.  Then I sear the roast and all sides, add salt and pepper and then put in crockpot with a large sliced onion.  I cook all day.  About an hour before serving I add baby carrots and canned whole potatoes.  Serve with biscuits.

I did find a Campbell's pot roast using cream of mushroom soup that I tried which turned out very well.

Mine is a beef stew rather than a Pot Roast w/ Potatoes, etc.  Very similar though.

 

2 Pounds Stew Beef (or Chuck Roast cut in 1 inch cubes)

1  28 oz can of crushed tomatoes

1 Lg chopped onion

1 bag of Crinkle Cut Carrots

20 small potatoes (I use tri colored or red and cut them in half)

3 C Low Sodium Beef Broth

1.5 t Ital Seasoning

2 Bay leaves

1/4 t salt

1/4 t pepper

1/2 C all purpose flour

1 C Frozen Peas

 

Place everything in Crock Pot EXCEPT Peas, 1/2 C of the Broth and Flour.  Cook on low for 8 - 10 hours  About 20 - 30 minutes before serving whisk the flour and remaining 1/2 C beef broth and add it the crock pot as well as the frozen peas.  Stir, replace lid and then continue cooking 20 - 30 minutes before serving.  Remove the bay leaves  Enjoy!

 

This recipe also calls for 2 Ribs of chopped celery but I leave it out.  I found this recipe on Pinterest several years ago and I make a batch of this beef stew every fall.  I'm getting ready to make it this weekend!

I do not really use a recipe.  I like to use a chuck roast, and I trim it from excess fat.  I salt and pepper it and rub it with flour.  I then brown it in canola oil in a Cruset Dutch oven.  

I like to season it with Penzey's roast beef seasoning and a bay leaf or two after browning it.  I then put the lid on and let it roast for a couple of hours in a slow, 300 oven.   I then add quartered potatoes, carrots, onions and celery.  I let it cook for an additional hour with the veggies.

 

Remove the veggies and the roast and I thicken the liquid in the pan,if necessary, to make a gravy.

Funny, I cooked a bottom round roast in my crock pot yesterday--turned out fabulous---sliced it thin for French dip sammies---I have NEVER been able to cook really good roasts--always dried out and no flavor. Have cooked  on the stovetop and in the oven---still awful. but now----and against my objection to using any processed packaged soup----I use Liptons onion soup mixes and my roasts have been the best. Yesterday I tweaked the soup mix  and added dried oregano, some powdered rosemary and a few other things, coated the meat all over thickly and put it in my crock pot and then poured some of the liquid from my jar of garlic overtop and added a small amount of red wine too. OMG-----still cooked it too long-Woman Frustrated-my crock pot cooks really hot for a crock pot, even on low-----but it was tender and very flavorful--the au jus from it was amazing-------

SODA CAN ROAST

1 3 LBS Chuck roast

1 12 oz bottle chili sauce

1 onion chopped

1 12 oz. can cola

1 Tbsp.worcestershire sauce

Score roast in several places and sprinkle salt and pepper to taste.

In skillet, sear roast on all sides. Place in sprayed slow cooker. (5 quart).

Combine chili sauce, chopped onion, cola and Worcester sauce. 
Mix well and pour over meat.  
Cover and cook High 4-6 hrs, or 8 hrs on Low.
