Hello,
Do any of you great cooks have a recipe for beef tips and noodles? This just sounds so good for our cooler days ahead.

My mom used to throw beef chuck and vegetables into the slow cooker with seasoning and let it go. At the end, she cooked up egg noodles and tossed them together. Easy to make and easy to clean with lots of leftovers.

Cook your Chucksteak with a cup of leftover coffee, whichever recipe you use.

I precook a sliced green pepper and a large onion in the microwave with some water until soft. Heat a large skillet with oil saute the peppers, onions and a small can of mushrooms. Season with garlic powder, salt and pepper to taste. Remove from skillet.
Slice your beef into thin strips and saute quickly over a med-high heat on both sides. Remove from pan (I do lightly salt and pepper the beef). I use sirloin tips when I make this. Mix up a couple of cups of cold water with two to three Tbls flour pour into skillet. Cook until thickened 2-3 minutes. Add vegetables and beef to gravy heat until hot. I serve this over white rice but noodles would work just fine.
If you like beef stroganoff you could use this as a good base using just mushrooms and increasing how many mushrooms you use either add another can or use fresh. Add sour cream at the very end after the pan has been removed from heat. I made the beef with all the veggies last week and did enough for another meal. It's just me and hubby. I happen to like broccoli so I cooked some frozen in the microwave and added that to the mix too.

This is an easy and totally "unfancy" recipe, but I've used it for many years:
(Can be made in oven or slow cooker)
Easy Beef Tips & Noodles
1 lb. sirloin steak cut in large pieces - about 2" (or very lean stew meat)
1 can Onion soup (Campbell's)
1 can mushroom soup
8 oz. cooked egg noodles
Slow Cooker (I prefer this method)
Mix soups together and pour over beef.
Cook on high for 1 hour, then turn temperature to low and continue cooking for approximately 2 1/2 to 3 hours. Check beef to make sure it's tender.
Oven: preheat oven to 325 degrees
Place beef pieces in oven proof pan with lid
Mix the onion soup and mushroom soup together and pour over beef.
Cook for 2 1/2 hours until the beef is fork tender. (if not tender, continue cooking for another 15 to 30 minutes)
Serve over cooked egg noodles.

Here's one we enjoy from allrecipes (you can print it from there if you wish.) Easy-peasy!
Slow Cooker Beef Stroganoff I
1 lb. cubed beef stew meat
1 (10.75) ounce can condensed golden mushroom soup
1/2 cup chopped onion
1 Tablespoon Worchestershire sauce
1/4 Cup water
4 ounces cream cheese
We have a slow cooker that browns, so brown the meat a bit. Add soup, onions, Worchestershire and water.
Cook on low for 8 hrs., or high for about 5 hours. Stir in cream cheese just until melted before serving.
Sometimes we double it and freeze half. Good over noodles or rice.
