@Infinite Mom 47 Ahhhhh!   Coke!  it's not just for breakfast any more.  (Although it IS still for breakfast too!).  ALL things go better with Coke.  Just don't have them really often any more! Woman Frustrated

  • Pot Roast with Gravy
  •  
  • 4-5 pound chuck roast
  • 2 T olive oil or avocado oil
  •  Salt & Pepper
  • 3-5 medium yellow onions, quartered
  • 5-6 whole carrots, peeled and cut into chunks
  • 3 russet potatoes, peeled and cut into chunks
  • Around 4-5 cups beef broth
  • 1/4 cup butter
  • 1/4 cup flour

Liberally sprinkle roast with salt & pepper.

Heat oil in dutch oven over medium high heat.

Sear all sides 3-4 mins.

Remove roast from pan.

Add more oil to brown onions.

Return roast to pan, on top of onions.

Arrange carrots & potatoes around roast.

Add enough broth to cover roast, about 4 cups.

Bring to gentle simmer, than cover place in oven for 4 hrs or til fork tender.

When tender remove roast, carrots, potatoes, onions.

Gravy

Heat remaining liquid over medium high heat 5-10 mins.

Make a Roux in a small saucepan, melt 1/4 cup butter over medium heat. Whisk in flour.

Cook 1-2 mins.

Whisk roux in liquid left in dutch oven. Simmer 10 mins til gravy is thickened.
