WHITE CHOCOLATE LEMON TART WITH RASPBERRY SAUCE

Had this for Easter dessert.  I think I found it on a food blog.

 

1 pie crust
8 ounces white chocolate
1 8 ounce pkg cream cheese, softened
1 cup lemon curd
1 10 ounce pkg frozen raspberries
1/2 cup sugar
Fresh raspberries for garnish

 

Place pie crust in tart pan.  Press dough up the sides and poke the bottom with a fork.  Bake in 425 oven for 15 minutes or until golden.  Put aside to cool.

 

Heat water to boiling in a medium pot and remove from heat..  Place chocolate in a bowl that can sit over water.  Leave for 3-5 minutes.  Stir with wooden spoon until melted and smooth. 

 

Put melted chocolate, cream cheese and lemon curd in a bowl and blend with mixer until smooth.  Spoon into pie crust and smooth top.  Refrigerate about 6 hours. 

 

Before serving process thawed raspberries until smooth with sugar in food processor.  Strain through a fine mesh strainer. 

 

Cut the tart into wedges and serve with sauce and a few fresh raspberries for garnish, 

 

I bought white chocolate candy bars and cut them up into small pieces.  Stirring the processed raspberries helps them get through the strainer faster.

@DiAnne refrigerate SIX hours!!   I'd never last that long. 

It sounds yummy.  I am a huge fan of all things cream cheese and white chocolate.

I am surprised the white chocolate and lemon combination worked. I wouldn't think to put those together but, you must have enjoyed it, so I might try this for an upcoming event.

HAHAHA! Yes, I think I'd be using a spoon and eating it like a soup after 20 minutes, because who could wait that long for all that deliciousness!?

Thanks, DiAnne, for the recipe. I have saved for my next party, meeting or whatever when I need to serve dessert.  I have a diabetic husband so I have to wait until I take this elsewhere. It's too much temptation and I understand that but this sounds so good.  Can hardly wait to make it.

 

I love raspberries better than anything but lemon curd and I adore them together, and all the rest just makes it all the better.

I hope you enjoy it.  It is very easy and very pretty with the raspberry sauce and raspberries.
