Vegetarian Stuffed Shells
6 ounces JUMBO pasta shells
1 (15 ounce) container Ricotta cheese
1 cup shredded Mozzarella cheese
3 Tablespoons grated Parmesan cheese
1/2 cup finely shredded unpeeled Zucchini... drain
1/2 cup finely shredded carrots
1 teaspoon dried parsley flakes
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder
pepper to taste
1 (15 ounce) jar meatless spaghetti sauce
Cook pasta according to package directions. Drain. **To keep them from sticking, put them on wax paper while to prepare remaining ingredients**.
In a medium bowl, combine the remaining ingredients EXCEPT for the spaghetti sauce.
Mix well. Put 1/2 of the spaghetti sauce in the bottom of an oblong baking dish. Put shells on top of sauce. Fill pasta shells with cheese mixture, using about 1 1/2 Tablespoons per shell. Put cheese side up. Preheat oven to 350* Spoon remaining spaghetti sauce evenly over shells. Cover tightly with lid or foil. Bake for 35 minutes.

Looks delicious!! Would be wonderful with spinach in the mixture, as well, IMO.

Sounds very, very good. I like anything that sounds Itaian and particularly anything with marinara sauce. Will try this soon. DH can eat this.

This looks absolutely delicious! I am just curious about the cheese - I thought vegetarians do not eat it??

NJgirl 1205... Hi there. I know there is alot of confusion...but as I understand it, vegetarian diets fall into three main categories based on the types of food eaten....
VEGAN
LACTO-VEGETARIAN
LACTO-OVO VEGETARIAN
A vegan does not eat meat, poultry, fish, eggs or dairy products. A lacto-vegetarian diet does not include meat, poultry, fish or eggs. However, lacto-vegetarians will eat dairy products, such as milk, cheese and yogurt. A lacto-ovo vegetarian diet only excludes meat, fish and poultry, while eggs and dairy products are allowed. I will be happy to. It will be a couple weeks before I try it. I hate to admit this but I have 1 gallon of marinara and 1 gal Alfredo sauce left over from this past weekend that I froze, and I plan to use it for a get-together with friends April 6 so after that will try it.

Thank you! I will be sure to ask future guests about which they fall into and maybe be able to have a recipe like this as an option. I typically struggle with all veg/grain/legume...
