I can eat soup about anytime! I made Vitamix's cheddar cauliflower soup a couple of weeks ago, that is so fast to make and I love it. I also love ham and cabbage soup (no potatoes!) but need to get a ham bone!

What all veggies do you put in your Veg Soup? My gram called her "refrigerator soup"... she put everything leftover in the pot!

Do you have a recipe for the ham and cabbage soup or just your method. I have a big cabbage and ham bone plus ham?

Re: VEGGIE SOUP IS MADE

[ Edited ]

I usually buy an eye of the round  or rump roast and cube it and simmer in beef broth to tenderize..  The liquid comes from more beef broth and V-8 juice.

I use turnip greens, lots of onions, carrots, french cut green beans, fresh mushrooms, cut okra, cut up tomatoes, a little corn.  I serve it over cut up cooked potatoes.

I freeze a lot of soup.

Cooked, refrigerated potatoes are mealy because the starch changes to sugar.

@We rescue cats

I'm like your gram, vegetable soup in this house includes everything in the refrigerator I want to get rid of.

My MiL had a huge Corning wear dish she kept in the freezer she put bits of leftover vegetables and roast beef in it as she had them
when it was full she’d pull it out of the freezer and make a huge pot of vegetable soup and big pan of cornbread , several cakes / desserts
Then She’d get on the phone to invite her children , her brothers, sisters, nieces , nephews and their families , friends to come eat

@Shihtzursqmom

At least you have some wonderful memories. and maybe some pictures of those happier days. You might be able to find some Corning ware that is of the same pattern in vintage stores or on the internet. I know it would not be the same exact  one she had, but seeing it in your home would remind you of some wonderful times. Take  care.
