I use that method to can peaches, tomatoes, apricots, etc, but they have to be somewhat soft. It doesn't work on hard anything.

There is a video on Youtube.
She put 6 pears in a pot of hot water for 10-15 seconds then puts in cold water. While the pears are in the cold water she uses her fingers to rub off the skin. Looks super easy. If you want to check out the video just search Quick and Easy Way to Peel Pears.
