Tortellini Pasta Salad

Mix into a bowl:

 

halved grape tomatoes

4 slices red onion, diced

1/2 raw zucchini, skin on, diced

fresh basil, chiffonade

sprinkle w/ salt & pepper

1 close garlic, finely chopped

 

Drain & add:

2 pkgs. cheese tortellini (cooked from frozen)

 

Toss w/ balsamic vinegar & EVOO.

 

 

This time I kept the salad very simple, but could easily add: cubed mozzarella, pepperoni or Kosher salami, olives.

A version of this dish was just featured on The Chew yesterday.  Their recipe included provolone and salami, and was dressed with Ranch dressing.

@Harpa  Here is another version, Tortellini Caesar Salad, shared by a former poster, Carol1229.  With chicken breast, it is a full and delicious meal.

Unfortunately, DH wouldn't eat a main dish salad for a meal.  He isn't a "jock, "he" man, or anything like that, an intellectual actually.  It just doesn't suit him.

 

However, when I close at night, he'll have soup and a sandwich. Unless the soup is a hearty vegetable soup, I don't consider it a "rounded" meal.
