I do the same, @RedTop .  I've always rinsed pasta for cold salads, and never for anything else.

My mother rinsed all pasta.

    I never do.

 

That's another one of those things we learned at home that needs to be 'un-learned'.

Scott Conant from Food Network says the same thing.  He looks like he is ready to rip someones head off if he sees them doing it on Chopped!

Most, if not all, the chefs I watch on TV say not to rinse the pasta because the sauce won't stick to it.  I've always rinsed mine and have no problem with that happening.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

I do not rinse wheat pasta that will be served hot.  I will rinse if served cold in a salad.

 

I do rinse rice or corn pasta with cold water each and every time.  It tastes funny and gets gummy if I don't.

I rinse and then I make sure it's dry before I proceed with the rest of the recipe.  Never had a problem with sauce not sticking.

I don't rinse and keep a cup of water in case needed.

 

Also just found out recently, not to put evoo in the water when boiling the pasta, so I just use salt.
