I was looking for a vegetarian option for a pasta salad and found this recipe on line.  Tried it out last night at a neighborhood gathering and it was a big hit.

 

1 pint grape tomatoes, halved
1/2 cup olive oil
3 cloves garlic, minced
1/4 t salt
1/4 t pepper
1/4 t red pepper flakes
1/2 cup chopped basil leaves
10 ounce cheese tortellini, cooked per package instructions
1-12 oz jar marinated artichoke hearts, drained
3/4 cup pitted kalamata olives, drained
grated parmesan cheese for serving

 

Mix the tomatoes, olive oil, mixed garlic, chopped basil, salt, pepper and red pepper flakes to a salad bowl.  Stir and let sit covered at room temp for 2 to  4 hours.

 

To assemble add the cooked tortellini, drained artichokes hearts, drained olives to the dressing mixture and stir to combine.  Sprinkle parmesan cheese on top and serve at room temp.  

 

I also sprinkled some chopped basil on top to serve.  I went back to another taste and found an empty bowl!

Did you need cut up in quarters (or cut at all) the artichoke hearts or slice the kalamata olives? Cause it sounds tasty, I'd like to try it. Also, how many people would you say it served?

The marinated artichoke hearts came in jar already cut in quarters and I got the pitted kalamata olives at the olive bar in my grocery store but you can also buy them in jars.  I used them whole.  I would say it serves about 6 as a side dish or 4 as a main dish.  Also the cheese tortellini was in the refrigerated section of store.

This salad has great flavors.  I've made it many times adding more ingredients for a dinner salad by adding Romaine, carrot, bell pepper, red onion and even small bites of salami.  It's entirely versatile.

My daughter recently made this and it’s absolut wonderful.  Very pleasant change.  Thanks for the reminder.
