Submerged Corned Beef with Cabbage, Carrots & Red Potatoes Simmering Away Last Night

Bought the flat cut corned beef brisket on sale on Saturday and my family asked if I would make it on Sunday.  So, here it is simmering away.  The corned beef is submerged in the pot with all the veggies on top and surrounding it.  Had a fresh rye bread with butter on the side that my son had with it, but my daughter and I had a slice of Irish Soda bread and butter with it.   RbZDIEPVQGutQ4IHiuhe-2014-01-31-16.24.17.jpg

I bought the fixin's for a Reuben Sandwich, which I've been craving!

 

Next, I'll do the corned beef with cabbage!

Got my corned beef too--- will cook it in the crock pot then will add the veggies an hour before it is done--I like the veggies to just get cooked in the liquid and not turn to mush by adding it all at once with the meat---YUM!!!!

@wagirl Me too with the veggies.  I added the veggies to the corned beef about 20-30 minutes before it was done...just until the potatoes poked with a fork are tender and cooked.

That looks GOOD!!! I will admit that I am corned beef challenged when it comes to cooking it. Not something we ever had in my family growing up. And the last time I made one several years ago I was so disappointed I tossed it out after just one meal. I'm not proud of that as I don't waste food. 😞 I think I'm going to give it a go again this year. It's been long enough that the bad memories have lessened. LOL!

 

If anyone has any tips or even a full proof recipe they would like to share, I could use it! Is it always best to slow cook it or is there an oven method? I am actually a good cook but, like I said, just not had much experience cooking corned beef...I think that one failed attempt was it. I'm quite adept at cooking cabbage though! 😋

@wagirl do you use the spices that the corned beef comes with or something else?   I might try doing mine in the slower cooker this year. thank you!

This year I was thinking of cooking corned beef with Colcannon.   The veggies would be less greasy and we could add some kale to it.

I usually bake my corned beef. Make Colcannon and fried cabbage with carrots.🥔🥕 We also have Irish soda bread. I might try the crockpot for the corned beef this year.

@ciao_bella  Happy St. Paddy's Day! Your picture looks so comforting and delicious!

 

We got together as a family this past weekend at my son's house. Fifteen of us! DIL had FOUR crock pots going with the corned beef. Made small red potatoes, boiled and smothered with salt, butter and parsley. She roasted the cabbage this time to save space on the stove, and it was good. We also always saute whole mushrooms with butter, thyme and lemon. She made Irish soda bread and had Irish butter and orange marmalade.

 

Enough leftovers the next morning for corned beef hash. Yea!
