I'm always at a loss of what side dish or dishes I can serve with stuffed peppers.  Usually I'll have green beans, but am looking for something different.  What sides do you make?

Squash casserole,  or sweet corn sounds good.

besides mashed potatoes I like cole slaw or a simple tossed salad.

always mashed potatoes ....mmmm comfort food together .  Just made it last night in fact .

I always make mash potatoes and peas.  Can I ask, do you make your stuffed peppers in the oven or on the stove top?  I am of Romanian heritage and make them on the stove top in a pot (large pot).

LOVE stuffed peppers!  Always in the oven and they have to be charred on the outside before they are done.  I mix cooked hamburger with pieces of the peppers from the tops I cut off, rice, italian spices, and tomato sauce.  I fill the peppers, cook them in the oven until the outsides are almost done, put ketchup on the top and finish.

 

We have corn or salad with them, sometimes slaw, sometimes just the peppers.  We never ever have mashed potatoes.  Neither of us like them.  Potatoes are usually sweet potatoes, roasted or cooked in the jackets in the pressure cooker.  

 

Stuffed peppers is a very favorite food of mine!  Always the green peppers if we have them.  Our fridge is never without peppers of some sort.  Organic!

I just made stuffed peppers last Saturday.  I served them with mashed potatoes, a tossed salad and a warm loaf of bread.

 

I make mine in the oven.  My MIL who was born in Europe, made hers on the stove.

caesar salad or a green salad.

biscuits if you want a bread.

 

funny, i just made stuffed pepper soup tonight! some will be frozen, some will be eaten.

@coffee drinker  I just always served stuffed peppers alone. My neighbor taught me to make them, and they were made with ground beef and rice. To me that was pretty much all the food groups. My children were never fans of peppers, so I didn't serve them often, but when we had a big garden, I needed to use up the peppers.
