Does anyone have a good recipe or a favorite way to fix yellow squash?

I make a soup with cut up squash, a large can of diced tomatoes in liquid, mushrooms if you want, add some water and lots of Italian seasoning. I have even added sweet potatoes or yams to it. Simmer for about 20 minutes or until squash and whatever else is cooked. Serve with fresh grated parm. I also like a good crusty Italian bread.

I like them cooked in a little water until soft, mashed with a potato masher to reduce the water. I put it in a bowl with butter. That's my favorite.
Or I put a couple different squash, onions, a little olive oil in tin foil and put on the grill.

Cut into slices, dip in beaten egg, dredge in flour with a little salt, pepper and garlic powder mixed in, then fry in butter or oil until golden and crispy. Serve right away. Yummy.

my Georgia grandmother would cut up squash, then cook on low heat for hours with onion, s/p and some bacon drippings for flavor.

The majority of squash eaten in this house is fried exactly as you described. My MIL used this recipe, teaching her children and grandchildren to eat yellow squash by calling them squash cookies. My daughters still love fried squash, but will eat them sauteed in a little butter.

My Favorite way to have summer/yellow sqaush, is fried also, except we battered in cornmeal, yummo!! Enjoy

I love it on the barbecue grill. Here is what I do (but it varies depending on my mood and available vegetables)
1. I take thick slices of yellow squash (zucchini, carrots, baby eggplant, potatoes, etc.) in a grill basket (or basket wok for the grill)
2. Drizzle one side with EVOO, sea salt and pepper
3. Flip and repeat again
4. I add fresh herbs from my garden (Rosemary, lemon thyme, etc.) to one side of the basket and close
5. Grill, flip, and enjoy!
Last night I paired it with shrimp skewers from the grill as well.
I also used cherry wood chips on the coals for added flavor.
