ONE PAN SUMAC CHICKEN THIGHS

I was looking for way to use the spice sumac that I had purchased for another recipe.  Had this a few nights ago.  Very tasty and easy. 

 

6 small bone in chicken thighs
2 oranges
1 T sumac
1 t kosher salt
pinch black pepper
3-4 garlic cloves, pressed
1/4 cup olive oil
6 sprigs fresh thyme or 1 t dried thyme

 

Preheat oven to 375.

 

In a bowl combine olive oil, salt, pepper, sumac, juice from one orange, garlic and thyme.  

 

Slice second orange into rounds and place on the bottom of the skillet.

 

Dip chicken thighs in olive oil mixture to coat evenly.  Arrange thighs on top of orange slices.  

 

Bake for approximately 45 minutes.  

 

I used a baking dish instead of a skillet since there was no browning involved.  There was enough olive oil mixture for a few more chicken thighs if desired.

Love the tartness of sumac!

My sis and I went to Israel fairly recently, and that was one of the spices I brought home from the (heavenly!) spice markets.
