@walker  I love Spanish Rice but have eliminated white rice  from my diet. I found out the frozen riced cauliflower works well in its place. You do not need to add any broth but everything else is fine.  Of course the texture is a little different but the taste is pretty darn on.

Thanks QWalker, I just made this and it was delicious, just like our favorite Mexican restaurant!! I used 6 fresh chopped tomatoes instead of the canned because I was out. Tried and true, I will definitely make this again.

Thank you for posting.  It sounds just delicious.  I have to be honest that when I want spainish rice, I head to taco bell.  The only thing I eat there but i love their rice.  Can't wait to try yours..

Blackhorse, Nadine O and anyone I have missed here....thank you all for nice comments...and to those who tried recipe....glad you liked it.  I need to keep this recipe "pulled forward" to fix more often!
