Another recipe posted in local Chicago paper recently along with Chicken Piccata.  Very good!

 

SPANISH RICE

 

3 tablespoons oil

1 medium yellow onion, chopped

4 cloves of garlic (minced)

1 cup white rice

1 (14 oz) can diced tomatoes

1 (14 oz) can chicken broth

1 teaspoon salt (or to taste)

 

Heat oil in large pan on medium heat.  Add onions and garlic; cook 3-5 minutes or until onions start to soften. Add rice stirring regularly, until lightly browned.

 

Add tomatoes with juice, chicken broth and 1 teaspoon of salt.  Mix well, cover pan with lid and turn heat to low.

 

Continue to cook 10-12 minutes or until liquid is absorbed.

I miss the Spanish Rice in a can.

 

So quick & tasty.

 

In your recipe above, is the rice already prepared?

1 cup of dry rice with 1 small can of broth may be too dry.

software.......the rice is unprepared and it was not dry...probably because you have a can of broth plus the tomatoes with its juice/liquid as well.  I just fixed it last night and will keep this recipe.....quick, easy and good!

One of my favorite meals.  Also good with browned ground beef added.

Thanks for the recipe. Would also be good with some black beans added or RoTel tomatoes instead of regular canned tomatoes, for a little kick.

I've been looking for a good recipe for Spanish rice.  Will give this one a try.  Thanks for posting!

My independently owned local grocery store still carries canned Spanish rice.   I buy it to use in my stuffed peppers.

I don't think I have ever heard of/seen Spanish rice in a can. Interesting!!!
