Spaghetti Soup

 

About 16 frozen meatballs (or homemade meatballs)...I like the beef ones from TraderJoes

 

1 (16)  ounce can tomatoes...diced

 

4 cups beef broth

 

1 (24 oz) jar spaghetti sauce

 

3 cups water

 

2 teaspoons dried basil

 

 

1/2 teaspoon salt

 

8 ounces spaghetti...broken

 

grated parmesan cheese for top

 

Prepare meatballs according to package directions. Set aside.

 

Drain tomatoes.

 

In a large pot, bring beef stock, spaghetti sauce and water to a boil. Add basil, tomatoes and salt and stir to combine.

.

Stir in pasta and meatballs to the pot. Simmer for about 15-20 additional minutes or until until pasta is tender.

 

Garnish with Parmesan cheese on top.

I add 1 small chopped onion and 1 minced clove of garlic to my Meatball and Spaghetti Soup.  Also, instead of the 16 ounces of diced tomatoes, I use 28 ounces of Italian seasoned crushed tomatoes.  

 

You can substitute crumbled Italian sausage (sweet or hot) for the meatballs.

Strive for respect instead of attention. It lasts longer.

It looks similar to spaghetti and meatballs.  I guess I'd rather have the real thing than a soup version.
