I've made PW's smashed potatoes numerous times. . . . May I suggest when you "smash" them, don't use a potato masher. Use the bottom of a glass measuring cut (like Pyrex) and do it gently so the potato pretty much stays together. I saw another TV chef do this, and it is much better than the potato masher method. I brush my potatoes w/ olive oil, salt, pepper & a bit of rosemary before baking. They are really good.

I cook these at least once a week. My DH and I love them with just about anything! I agree with NOT using a potato masher; mine always fell apart when I did them that way. So the cup is better. I still have to be really careful or they will crumble. I put various toppings on them and we eat them all. Yummy!

I make them same way Rachael Ray does, but this way seems easier. I will do it this way next time. Thanks for the post.

I just wanted to share that I made Smashed Potatoes tonight and they were really good. I used Ree Drummonds Recipe posted here. I added Scallions, pieces of Peppered Bacon, and Cheese. I will post a picture once I know how. Thank You all!
