Since strawberries have natural sugars, keep the serving size to one average scoop, if you're watching the carbs. I made one batch already and have more strawberries freezing so I can send a batch home with one of our kids tomorrow.
Dairy Free Strawberry Ice Cream
3 cups (663 grams) Strawberries - Frozen
1 (15 oz) can Unsweetened Coconut Milk
Your desired sweetener (I used a little powdered Swerve)
Make sure your strawberries are frozen before you begin.
Add them to your blender (I used my Vitamix)
Add all the coconut milk
Run the blender until everything is well combined. (My Vitamix has a tapper to push things around through the lid. You may need to stop blending and scrap/stir with a rubber spatula)
Add sweetener to taste, mix through .
Transfer to an appropriate container and freeze for 3 hrs.

I saw this recipe being made with Jan last time the Vitamix was the TSV and thought it looked great!! DD can't do dairy so this is perfect--can see different flavors for this recipe too!!

FYI - this freezes rock hard. Better to use the mixture for homemade popsicles.

I made this recipe a few nights ago, only added some bananas to it---turned out wonderful----I didn't freeze it tho--so it was very soft. but really good, we added some granola and nuts to it---leftovers were used in our a.m. smoothies with some greens and protein powder and oatmeal---so good!! I love coconut milk!!!

I ended up thawing what I had left and then made ice cream bars with it. Works much better that way.
