The cookie recipe I'm about to make calls for sifted flour. I don't have a sifter. Will the cookies come out good if I don't sift the flour or do I need to make a trip to the store and buy one?

I don't have a sifter either. I use a strainer.

Sifting is just to lighten up the flour so you won't use too much when you fill a cup.

Most cookbooks, when written, gauge a cup of flour at about 4 1/2 ounces. If you weigh your flour it is much more accurate and you don't have to sift it.

If you don't have a scale or sifter, just stir and lighten the flour with a fork and spoon it lightly into the measuring cup, don't pack it. Use a butter knife to level off the cup.

Sifting seems obsolete in current recipes, just like separating egg yolks from egg whites.

Modern flours are different from 20 years ago. Sifting really isn't necessary.

Have fun baking your cookies. On a cold day like today, the scent of fresh cookies will be heavenly, and so will eating them warm with a cup of coffee (or a glass of milk, if you prefer)!
