We went to a favorite, been here for decades, Italian restaurant two weekends ago and I was so thrilled that it was 'Seafood Lasagne' day.  I am still dreaming about that seafood lasagne.   I hadn't had it in some time, so it was great that I lucked out because they do one lasagne each day and that's my favorite.  I wish I was eating it right now!

 

We're not on the coast, but if we were seafood would be one thing I would enjoy as much as possible.  I'd cut off my arm for some fresh abalone.  *drool*

Your directions describe the best scallops I ever tasted -- I went with a friend who's a chef-caterer to a seafood exposition for the trade.  Our favorite booth was serving scallops just quickly seared in a hot skillet.  I never saw them add anything to the skillet (and we somehow kept circling back and back to that booth for more samples!).  So delicious -- of course the quality of the scallops themselves was the secret -- it was a revelation in taste without seasonings.

I hear you, @Honeybit!! Fresh, plump scallops are such a luxury!

 

I grew up in New England, so never gave a thought to the freshness of seafood. It was just always available!

 

We had a cottage 2 houses from the ocean on Cape Cod while I was growing up, and sometimes in the Fall, a neighbor would be dragging for scallops. I remember holding one in my hand, and along the membranes were beautiful, sparkly blue eyes. So pretty!

 

There are Scallops Fests on the Cape, always in September, if anyone wants to visit N.E.!

 

Two years ago, I moved from an east coast harbor town, all the way to a landlocked state, so fresh seafood is now a thing of the past.

Oh well, but it has other pluses! Smiley Happy

Scallops are my favorite and I have a very very small kitchen. I recently bought a counter top induction cooktop and absolutely love it. I only buy dry scallops so they get a beautiful golden sear on them, the microwave will turn them to rubber. If you have the space for the induction cooktop, I highly recommend it, then you can pan fry your scallops! Good luck, I hope this helps!
