Sandwich ideas for outdoor picnic?

Going in a couple weeks. I was going to buy the small Hawaiian rolls but need ideas for what to fill with. I’m nervous about using anything mayo based in case it’s pretty hot out.

How about doing some wraps in tortillas?  Eggs, cheese, onion, bell pepper etc. and having salsa to go on them. Sautee the veggies and the cheese will hold it together while hot, fill the wrappers, roll up and stick with a toothpick and they should work well.

 

Or make a similar dish like a breakfast casserole that could be refrigereated and then come to room temp and be cut up and served. 

 

Can you make sliders ahead with deli meats and mustards, freeze them and let them thaw to stay cool?  You might test drive that.

I am a big tuna salad or chicken salad person.  I do have a nice insulated bag that I pack my sanwiches and drinks in, especially use it for the beach.    A couple of ice packs does the trick Smiley Happy  Enjoy.

I was going to suggest chicken salad sliders but doesn't chicken salad include mayo?

How about Muffaletta sliders?  There are all kinds of recipes out there for this, but one is below.  It's non-mayo, but you would still need to keep them chilled.

 

 

 

Hawaiian Sweet Rolls are split in half filled with Giardiniera relish, Spanish olives, salami,  black forest ham, provolone and olive oil, stacked in layers and picked with sweet chip pickle and cherry tomato. 

MUFFALETTA STACKED SLIDER RECIPE

Muffaletta Sliders- Game Day Sandwich

INGREDIENTS

1 cup mixed pickled vegetables-tested Mezzetta Giardiniera

¼ cup pimiento-stuffed Spanish olives

¼ cup black olives

2 tablespoons olive oil

¼ cup chopped red onion

1 package Hawaiian rolls

10 slices hard salami, thin sliced

10 slices provolone cheese, thin sliced

½ pound black forest ham, thin sliced

Garnish:  12 black olives, 12 bread and butter sweet pickle slices

INSTRUCTIONS

  1. In food processor fitted with steel blade, process vegetables, onion, olives and olive oil into small pieces.
  2. Slice Hawaiian bread dinner rolls in half horizontally and do not separate dinner rolls, keep as one unit.
  3. Spread half of vegetable mixture on top of roll base.
  4. Next, layer the salami, cheese, and ham slices, top with remaining relish.
  5. Cover with bread top.
  6. Wrap entire sandwich rolls with plastic wrap and refrigerate overnight.  When ready to serve, slice each individual roll into a square and garnish with pickle slice, one black olive on a wooden pick.

 If you have cold packs in your picnic basket  you should be set for just about anything.

Pan Bagnet a French tuna sandwich. but they would be better with crusty bread.

Peanut butter and jelly

Fluffernutter? no refrigeration required.

Ice is fine with mayo which has lemon in it.  What you read about is "uncooled items" that have been in a melted cooler all day.

 

Fill a cooler with ice, put containers of chicken salad and tuna salad in the ice.  Take a tray of fresh lettuce and sliced tomatoes, chips, pickles, and a cut up fruit tray.

 

Potato salad is fine IF in a cooler with ice.

 

My degree included food science.

Not melted ice.  Fill the cooler and don't leave it sitting on the table all day with no cooling.

Leftovers are not to be kept.
