This recipe comes from a friend of mine and the remarks are hers. It's a tasty and easy meal.

SV’s Mexican Casserole

"I found this recipe on the back of a Grande Tortilla chip package years ago. I’ve adjusted it to be a little bit spicier, just by the amount of salsa I use. It will feed four easily; I double it for company."

1 lb ground beef
1/2 cup chopped onions
Salsa of your preference; I use Pace, large jar medium spicy
1 small can of sliced olives
8-oz sour cream
2 hard-boiled eggs
Tortilla chips
1 cup of grated cheddar or Colby cheese
Optional: 1 small can of tomato sauce


Brown the ground beef and onions; drain. Add enough salsa to thoroughly cover the meat; it needs to have the liquid. You may want to use the tomato sauce in place of some of the salsa; we like it with straight salsa. Let simmer about ten minutes to let the flavors blend. Using an 8 x 8 casserole dish, layer the bottom with tortilla chips. Top this with one half of the meat mixture, another layer of chips and the rest of the meat.

Bake in a 350 deg F oven for about thirty minutes or until bubbly.

In a small bowl mix the sour cream, olives, chopped eggs, and another one-third cup salsa. This is the topping for the baked casserole. You can spread it over the entire baking dish, or serve it over individual portions.

"I usually serve this with a salad and a vegetable; broccoli looks good with it for color on the plate. An easy quick dessert is Lemon Cake."
