Chicory Salad with Anchovy Dressing

YIELDMakes 4 to 6 dinner-sized servings

 

INGREDIENTS
FOR THE ANCHOVY DRESSING:
  • 7 TABLESPOONS

    (100 ML) FRESH LEMON JUICE

  • 1 TEASPOON

    FISH SAUCE

  • 1 TABLESPOON

    RED WINE VINEGAR

  • 2 TABLESPOONS

    FERMENTED HONEY, OR HONEY

  • 18

    OIL-PACKED ANCHOVY FILLETS, MINCED

  • 6

    GARLIC CLOVES, MINCED

  • 1 CUP PLUS 2 TABLESPOONS (115 G) FRESHLY GRATED HARD CHEESE, SUCH AS PARMESAN OR PIAVE VECCHIO CHEESE

  • 3/4 CUP

    (180 ML) UNFILTERED SUNFLOWER OIL

  • 2 TEASPOONS

    KOSHER SALT

  • 1 TEASPOON

    FRESHLY GROUND BLACK PEPPER

  • 1/8 TEASPOON

    HATCH CHILE POWDER OR SPICY RED PAPRIKA POWDER

  • 1 TABLESPOON

    FRESHLY GRATED HORSERADISH

FOR THE SALAD:
  • 1 POUND

    (455 G) MIXED CHICORIES, SUCH AS TREVISO, PUNTARELLE, RADICCHIO, ESCAROLE, AND ENDIVE, TRIMMED AND ROUGHLY TORN INTO 1-INCH (2.5-CM) PIECES

  • 1

    FENNEL BULB, HALVED, CORED, AND THINLY SLICED

  • 1 BUNCH

    RADISHES, TRIMMED, AND THINLY SLICED

  • 2

    KOHLRABI OR SMALL DAIKON RADISHES, PEELED AND CUT INTO THIN HALF-MOONS

  • 1 BUNCH

    GREEN ONIONS, WHITE AND TENDER GREEN PARTS, THINLY SLICED 1/4 IN/6 MM THICK

  • 1/2 BUNCH

    FRESH DILL, CHOPPED

  • 1/2 BUNCH

    FRESH FLAT-LEAF PARSLEY, CHOPPED

  • FRESH HORSERADISH FOR GARNISH

INSTRUCTIONS
  1. TO MAKE THE ANCHOVY DRESSING: IN A SMALL BOWL, WHISK TOGETHER THE LEMON JUICE, FISH SAUCE, VINEGAR, HONEY, ANCHOVIES, GARLIC, PARMESAN, SUNFLOWER OIL, SALT, PEPPER, CHILE POWDER, AND HORSERADISH. COVER AND REFRIGERATE UNTIL READY TO USE. THE DRESSING CAN BE STORED IN AN AIRTIGHT CONTAINER AND REFRIGERATED FOR UP TO 5 DAYS. SHAKE WELL BEFORE USING.

  2. TO MAKE THE SALAD: IN A LARGE BOWL, COMBINE THE CHICORIES, FENNEL, RADISHES, KOHLRABIES, GREEN ONIONS, DILL, AND PARSLEY. ADD THE DRESSING AND TOSS TO COAT EVENLY. FINELY GRATE THE HORSERADISH OVER THE SALAD AND SERVE.

Baby chard is in several of the salad mixes I get in a package or plastic bag.  No recipe needed...just open the bag and add tomatoes and your favorite salad dressing!

I was going to repost a recipe from earlier this year by @Reconnaissant (thanks) ....Apple Bacon Brussels Sprouts....check it out.  But, here is one for today.....

 

Sweet-Sour Brussels Sprouts

 

1 pound fresh BRUSSELS SPROUTS

1 teaspoon canola oil

1/2 cup finely chopped onion

1/4 cup cider vinegar

2 tablespoons sugar

1/4 teaspoon dry mustard

2 strips (or more) cooked and crumbled bacon

 

Wash and trim BRUSSELS SPROUTS; set aside. Place oil in non-stick skillet.  Add onion.  Combine remaining ingredients; add to skillet.  Then add BRUSSELS SPROUTS; stir to coat.  Bring to a boil; reduce heat, cover and simmer 10-12 minutes or until crisp tender.  Before serving sprinkle with bacon pieces.

Cabbage and Chard Fried Rice with Sweet Potatoes and Shiitake Mushrooms

Ingredients (2 servings)
2 Eggs
1 cup Jasmine Rice*
4 tsp oil, DIVIDED
4 oz Shiitake Mushrooms, stems discarded & caps thinly sliced
½ head Broccoli, chopped into small florets*
Salt and Pepper to taste [+ seasonings to your taste]
3 cloves Garlic, minced
1- 1" Piece Ginger
1 bunch Green Chard*
3 Scallions, greens and whites separated 
1Carrot, cut into matchsticks*

1 Sweet Potato
½ cup water, DIVIDED
¼ head Napa Cabbage, core removed
4 TBS Sweet Soy Sauce*

*My Shortcuts and Tips
•Use jasmine rice in the microwaveable pouches [I mwv and refrigerate pouches the night before making this dish]
•Buy a bag of matchstick carrots and broccoli florets from produce department
•Use jarred ginger-garlic paste
•Kale or spinach may be substituted for chard
•My version of sweet soy sauce is regular soy sauce with brown sugar+drizzle of molasses+dash of sesame oil+light shake of red pepper flakes

 

Directions
Cook rice, per package directions [If using jasmine rice in the microwaveable pouch, the yield of pouches should be 3 cooked cups].

 

While the rice cooks, Remove the root ends of the scallions; thinly slice scallions, separating the white bottoms and green tops. Cut out stems of chards with a sharp knife; either small-dice them for inclusion in the stirfry or discard. Roll chard leaves pinwheel style and chiffonade into ~1/4" ribbons with knife; do same for the cored cabbage leaves. Grate peeled sweet potato on the large side of box grater. Crack eggs into a medium bowl and beat until smooth; set aside.

 

Heat 2 tsp oil in a wok or large skillet on med-hi until hot. Add mushrooms and broccoli; cook, stirring occasionally, ~4 to 5 mins, or until mushrooms have softened and broccoli is bright green. Season with S&P. Transfer to a bowl and set aside. Wipe out the pan.

 

In the same skillet, heat 2 tsp oil on med-hi until hot. Add the garlic, ginger, chard stems and white bottoms of the scallions; cook, stirring constantly, ~30sec - 1min, or until fragrant. Add carrot, sweet potato and ¼ cup water; cook, stirring frequently, 2 - 3 mins, or until the carrot and sweet potato have softened slightly.

 

Add the cabbage, chard leaves and ¼ cup of water; cook, stirring occasionally, 2 - 3 mins, or until the chard leaves have wilted.

 

Add the eggs, cooked broccoli and mushrooms to the pan of vegetables. Cook, stirring constantly, 2 - 3 mins, or until thoroughly combined and eggs are cooked to your degree of doneness. Remove from heat.

 

Add the cooked rice and sweet soy sauce to skillet w/veggies, combining well; season w/S&P to taste. Divide the fried rice between two dishes and garnish with the green tops of the scallions.

Always cooked turnip root with greens when we had them!

 

Turnip Greens are a Southern staple and this slow cooker turnip greens recipe is sure to become a favorite.

 

Ingredients:  

8 pounds fresh turnip greens about 2 bunches

3 medium turnips peeled and cut into ½” cubes

1 (½ pound) ham hock or 2 Tbsp bacon grease

1 tablespoon granulated sugar optional

pinch red pepper flakes (optional for flavor)

Instructions: 

  • Spray insert of slow cooker with non-stick cooking spray.
  • Add half of greens to the slow cooker with about 1 cup of water, peeled and quartered turnips, and ham hock or olive oil. If you are using the sugar and red pepper flakes, add those as well.
  • Cook on low setting for about 1 hour until greens have reduced. Add remaining greens to the slow cooker and set time on low for 4 more hours.

  • Note: The longer turnip greens cook, the better the flavor, in my opinion.

Works just as well in large pot on stove top!

Golden Parmesan POTATOES

 

6 large POTATOES

1/4 cup flour

1/4 cup grated Parmesan cheese

3/4 teaspoon salt

1/8 teaspoon peppr

1/3 cup butter

chopped parsley

 

Peel POTATOES and cut into quarters.  Combine flour, cheese, salt and pepper in a bag or container.  Moisten POTATOES with water and shake a few times in bag coating the POTATOES well with cheese mixture.

 

Melt butter in a 9x13" baking dish.  Place POTATOES in a layer in the pan.  Bake at 375 for 1 hour, turning once during baking.  When golden brown, remove from oven and sprinkle with parsley before serving. 

NEXT INGREDIENT ..... BACON

PIG CANDY (aka - Candied Bacon)

 

Thick Bacon Slices

Brown Sugar or Alternative Granulated Brown Sweetener for low carb or keto

Mix in some Black Pepper, to your liking 

Optional - cayenne pepper, crushed red pepper 

 

 

Preheat oven to 375 degrees


Line jelly roll pan with foil.  Place wire baking rack in the pan. Lay out the bacon.  Sprinkle the bacon with a good coating of the brown sugar and pepper mixture. (Cayenne will give more heat than black pepper. Crushed red with give a lot of heat. Choose your own level of heat.). Press the brown sugar mixture down on the bacon.

 

Bake 30-40 mins.  Check at 30 mins. and watch so it gets completely done but not burned. 

Allow to cool 10-15 mins.


Can be served in strips or cut into smaller pieces.
