I made this recipe for a family reunion which was held yesterday and it was a big hit.  I didn't bring any home.

 

Ruby Red Raspberry Salad

Ingredients

1 package (3 ounces) raspberry gelatin

2 cups boiling water, divided

1 package (10 ounces) frozen sweetened raspberries

1-1/2 cups sour cream

1 package (3 ounces) cherry gelatin

1 can (20 ounces) crushed pineapple, drained

1 can (14 ounces) whole-berry cranberry sauce

½ cup pecans, broken into small pieces

 

Directions

Dissolve raspberry gelatin in 1 cup boiling water. Add raspberries and stir until berries are thawed and separated. Pour into a 13-in. x 9-in. dish; chill until firmly set.

Carefully spread with sour cream; chill. Dissolve cherry gelatin in other 1 cup of boiling water. Add pineapple, cranberry sauce and pecans; mix well. Allow to thicken slightly.

Carefully spoon over sour cream mixture; chill.

 

NOTE:  I could not find frozen sweetened raspberries.  So I bought two small packages of fresh raspberries and added a small amount of sugar.  I let it sit until some juice was formed.  Then I froze the berries.  The next day I took the package out of the freezer, broke the raspberries into small pieces, and weighed it on the kitchen scale so I had 10 ounces.  I then proceeded with the rest of the recipe.

I've had this before and it is good!  Thanks for the recipe.  I will keep it in mind the next time I need a covered dish.

That sounds deicious! Thanks for sharing. I'll probably make it with sugar free jello to cut a few calories and sugar grams. I think everyone in any crowd would love this.
