Toss grapes lightly with olive oil & lay them on a cookie sheet. Bake at 425 degrees about 30 minutes.

 

 I had these tonight for the first time. To me, they tasted a little like wine. Delicious!!   Smiley Happy

That sounds like a recipe I could groove to.  How does the texture of the grape change?

It softens them,  but they stayed whole. I guess if you keep them in too long they can completely deflate. Ours were kind of like a "misshapen" grape! LOL!  Smiley Wink

Never tried this, but sounds good.  I have cooked them in a sauce (like cranberries) which lacks something somehow.

@beach-mom thank you!  I've seen this done before but never tried it.  I think I saw bruschetta topped with ricotta cheese and roasted grapes.
