Thanks for the rice pudding recipes, I will be sure to try one of these today. Love rice, only make it once or twice a year and at this time I really have a taste for it.

@Ainhisg Happy Friday ~ I just read your nice post and would love to accept your offer for a foolproof rice pudding recipe. I'm thinking this week end will be perfect for making (and sharing) some homemade rice pudding. My grocery order was just delivered so I now have the raisins I like. Once more, thanks a bunch!

Pressure Cooker Rice Pudding
Yield: 8 servings
Approximate Total Time: 30 minutes plus chilling time
Electric Pressure Cooker Size: 6 quarts
1 cup Arborio rice
1 1/2 cups water
1/4 tsp. salt
2 cups whole milk, divided
1/2 cup sugar
2 eggs, beaten
1/2 tsp. vanilla
3/4 cup raisins or dried cranberries (optional)
Combine rice, water, and salt in the pressure cooker pot. Lock pressure cooker lid in place and set steam vent to Sealing. Select PRESSURE COOK (Manual) and cook for 3 minutes on High pressure. Once the 3-minute cooking cycle is complete, allow 10 minutes for the pressure to release naturally. After the 10 minutes have passed, open the steam vent to release any remaining pressure.
Remove lid and add 1 1/2 cups milk and sugar to rice; stir to combine. In a small mixing bowl, whisk eggs with remaining 1/2 cup milk and vanilla. Pour through a fine mesh strainer into the pressure cooking pot. Select CANCEL and then SAUTE. Cook, stirring constantly, until mixture starts to boil. Select CANCEL. Remove pot from the pressure cooker and stir in raisins or dried cranberries, if desired.
Pudding will thicken as it cools. Serve warm or chill pudding in refrigerator. Pudding may be served topped with whipped cream and/or a sprinkle of cinnamon or nutmeg. If pudding thickens more than desired, stir in additional milk until the right consistency is reached.
