I've made this salad for years, and I just LOVE it! There may be different variations floating around, but this is the version I make!

Rice-A-Roni Salad

1 pkg. Oriental Rice-A-Roni

1 cup chopped celery

2 green onions, chopped

1/4 cup sliced green olives**

2 jars marinated artichoke hearts

2 Tbsp Mayonnaise

1/2 tsp. curry powder

1/2 chopped bell pepper, optional

1 small can sliced water chestnuts, optional

1/4 cup toasted sliced almonds, optional

Prepare Rice-A-Roni according to package directions; let cool.

Add celery, onions, olives, bell pepper, water chestnuts, and almonds (if desired).

Slice artichoke hearts and add to salad; mix together.

Mix oil from artichokes, mayonnaise, and curry in small bowl.

Mix into salad. Chill until salad is cold and serve.

Serves 8-10

* I add extra (1-2 cups) cooked white rice and extra mayonnaise, to taste. I also have omitted the bell pepper and onion from time to time. I love this salad. It's also good warm!

* *I use canned green olives-amount "to taste."
