Iced brownies, cookies, cupcakes or fruit pie.   I have a milk allergy, and avoid creme pies and pudding desserts.

Thanks for the constructive replies.

 

Was out of town yesterday until about 7pm.  After getting home, made an apple pie using coconut oil in the crust (instead of butter).  Found the recipe online - was unsure how it would turn out, but was suprisingly good.

I did have trouble rolling the crust out, so I finally just "pressed" it into the pie pan; filled with apple filling and baked.  Turned out to be more of a crumb kind of crust, but was really good with the apples.  If I did it again, I may add a bit of brown sugar and cinnamon to the crust recipe for more of a struesel kind of flavor.

 

My nephew"s girlfriend is the one who is lactose intolerant, and she seemed genuinely pleased that I made that effort for her.

 

So thanks to you all again, and I will remember some of your suggestions.

(I also took a bowl of fruit!)
