Do you think that it would work to prepare the sweet potatoes in a food processor? If so, which blade would  you recommend? (Wish that I had a spiralizer,) Thanks for this very interesting recipe!

Hi Zhills! I have just been busy-and for everything that's going on with me-diabetes and all- I am doing really well. I have not given up on cooking at all, but my new passion is making "bad" recipes work for me....and I love finding great recipes like this gem! How are you these days?

I would use the grate/shred disc in the food processor.  Let me know how that works if you try it.

I have a thread under Wellness.  Your "trainwreck" made a stop here too.  It has been a rough summer, starting in February!  

 

Just praying and trusting that next week will be the end of the "wreck".   Thanks for the hugs, I needed those.

Thanks, Dianne! I have a feeling that this recipe will inspire me to buy a spiralizer instead ot trying to use a food processor to make it. I have wanted one for a while now -- all I have to do is figure out where to store it. And many thanks for all of the wonderful recipes that you have shared over the years!
