Homemade Ranch Dressing the Healthy Way
In a food processor or blender combine all of the ingredients and pulse until thoroughly blended. Adjust seasoning as needed.
Pour into an airtight container and chill for 1 to 2 hours before using.
Thin with more buttermilk if needed.
From the Pioneer Women cookbook and Paula Deen also has a version I know of:
Ingredients
1 clove garlic
1/4 teaspoon kosher salt
1 cup real mayonnaise
1/2 cup sour cream
1/4 cup Italian flat-leaf parsley leaves, minced
2 tablespoons fresh dill, minced
1 tablespoon minced fresh chives
1 teaspoon Worcestershire sauce
1/2 teaspoon ground black pepper
1/2 teaspoon white vinegar
1/4 teaspoon paprika
1/8 teaspoon cayenne pepper
Dash hot sauce
1/4 to 1/2 cup buttermilk (as needed for desired consistency)
Directions
Mince the garlic with a knife and then sprinkle on the salt and mash it into a paste with a fork.
In a bowl, combine the garlic paste, mayonnaise, sour cream, parsley, dill, chives, Worcestershire sauce, black pepper, vinegar, paprika, cayenne and hot sauce. Add the buttermilk to desired consistency and mix to combine, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thinning with more buttermilk if needed.

Go to TOP SECRET RECIPES. Todd Wilbur makes amazing substitutes. I have made his Ranch Dressing many times. It tastes just like he says it will. They are all replicas of famous restaurants. You will love their Buttermilk Ranch. I have given to friends all of his books. He used to come on QVC but I haven't seen him on for at least 1 year. Many of his items on the website are free. The Ranch recipe used to be free.

But posted OLD I think. It came from the Monthly Recipe Game. I neglected to list the source and I apologize. I am always trying to squish things on one page!
Sesame Dressing for salads
2/3 C rice vinegar
1 C canola oil
2 Tbs sesame oil
4 cloves garlic, smashed to a pulp, or very finely minced
2 Tbs soy sauce
1/2 C sugar
4 Tbs sesame seeds
Place all ingredients into a mason jar, & and shake well. Best if made a bit ahead of time, and stored in the fridge to give time for flavors to meld. (Obviously, it makes a lot.)
Toss w/ a salad of crisp Romaine, red onion, tomatoes & cukes. (I always peel & seed cucumbers, as it avoids any tummy discomfort caused by the seeds & peel.) Add crunchy chow mein noodles, or deep fry some sliced wonton wrappers if you're feeling adventurous. Also good over a spinach & mandarin orange salad.
ETA: Cut down on the garlic, if you're not a big fan of raw garlic.
I tend to use half as much sesame oil than called for, as a little goes a long way.

Avocado Dressing
Buttermilk and fat-free yogurt create the base for this creamy and delicious dressing. And the avocado, parsley and dill add freshness, flavor and a lovely color to this easy choice for summer pasta.
Ingredients
1 cup buttermilk
1/2 cup fat-free plain yogurt
1 ripe avocado, peeled and sliced
2 green onions, chopped
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon dill weed
1/8 teaspoon pepper
Directions
In a blender, combine all ingredients; cover and process until blended.
Transfer to a jar with a tight-fitting lid or small bowl. Serve immediately or refrigerate.
Yield: 2 cups.
Nutritional Facts 2 tablespoons equals 30 calories, 2 g fat (trace saturated fat), 1 mg cholesterol, 96 mg sodium, 2 g carbohydrate, 1 g fiber, 1 g protein. Diabetic Exchange: 1/2 fat.

This isn't really a 'tossed' type salad, but the dressing combo in this recipe I have used many times.
Spring Artichoke Salad
Total Time : 30 minutes
Prep Time : 20 minutes
Servings : Serves 4
Ingredients
3/4 pound red potatoes, quartered
1/2 pound green beans, cut into
2-inch pieces
*Two 6 oz. jars marinated artichoke quarters (reserve 2 Tablespoons of the marinade)
3 Tablespoons olive oil
2 Tablespoons fresh lemon juice or orange juice
1 teaspoon Dijon mustard
2 Tablespoons parsley, chopped
2 teaspoons dried oregano
2 teaspoons orange zest
1 cup cherry tomatoes, halved
Salt, to taste
Pepper, to taste
Directions
Bring a large pot of water to boil.
Add the green beans and blanch until crisp and tender, about 1 minute.
Remove the beans from the hot water with a strainer or slotted spoon and refresh in a pot or bowl of cold water. Pat the beans dry to remove excess water.
Add the quartered red potatoes to the same pot of water and cook until the potatoes are tender, about 8 minutes. Drain and cool.
Drain the artichoke hearts, reserving 2 Tablespoons of the marinade.
In a bowl, add the reserved 2 Tablespoons of artichoke marinade, plus the olive oil, lemon juice (or orange juice), Dijon mustard, parsley, oregano and orange zest. Whisk together until combined.
Add the potatoes, green beans, artichoke hearts and cherry tomatoes to the bowl of dressing from Step 3 and toss to combine.
Season to taste with salt and pepper. Serve chilled or at room temperature.

Well I would say that went rather well! I'll give you the Cliff Notes version first and then my personal observations.
Talked to a couple of companies but then found a staffing agency called Chase Staffing. Hit it off with Mary who was not put off by my length of time out of work nor my 75% pay cut. They are hiring for a positiion(s) 15 minutes away from me and it's research work which I am great at! She thinks I am a great fit and will call me tomorrow to set up a more formal interview but I am sooooo excited!!!
