I have been doing some research about making homemade vanilla and it seems that the alcohols of choice are vodka, rum, or bourbon. The general consensus is vodka gives a more pure vanilla taste as vodka itself is fairly tasteless so it doesn't compete with the vanilla. If you want a bourbon (Respect this is calling your name!) or rum flavor to your vanilla, use one of those. I did a little more reading and found a good suggestion which was to go to your local liquor store and purchase airplane bottles of vodka, bourbon and rum, place a split bean in each, let it sit for 30 days and then taste them to see which you prefer. General rule is one bean per cup of alcohol but have seen recipes that use more. Ina's recipe starts with a jar large enough to hold 12 beans then cover with alcohol. I also read you want alcohol that is at least 75-80 proof. I have read so many recipes that I have decided it really doesn't matter too much what you use, aging is essential, grade B beans infuse a better flavor . Maybe just a gift of really good vanilla from Spice House or Penzey's would be a whole lot easier-unless you want to go for that bourbon or rum flavor!
Am I the only one who caved and bought the TSV today? In fact, I was upset that I only ordered one set and did that from the preview email. I tried to cancel it today and reorder 2 sets so I would get the 3.00 discount but my original order has shipped.

What I am thankful for on this Thursday is that my stomach issues have been resolved and that none of my house blew off overnight . . . ![]()
I do have a question to my culinary friends . . . is there a difference between potato starch and corn starch? I received a recipe today for Japanese Fried Chicken and it calls for potato starch but I would rather not buy it if I don't have to. Also, does anyone have any knowledge of sake in terms of what I could substitute for that?

eta: thanks but I found the answers online (corn starch is fine and either sweet sherry or japanese wine will do or I can leave it out altogether).

Hey mtc, glad to hear you are feeling better.
I have substituted corn starch for potato starch, does the same thing.
Also, I use cooking sherry for sake, I'm like you, I'm not buying every single ingredient for one tablespoon LOL!

Hi mustang, I did not buy the TSV yesterday but I thought it was a great idea & great value. I really wanted it but I don't need it.
I have somewhat of a plastic container fetish so I have to reign myself in sometimes LOL!!!

The Spice House already makes a Bourbon Vanilla! LOL I'm on my third bottle...no, I'm not drinking it! Just always seem to go for that one when I bake!
The info on the homemade vanilla is so interesting! Takes 30 days, huh?
I didn't get the TSV this year since we gave them last year. DH has the same staff so we try to get something different each year. It was a better value this year, bowls were bigger!
I have that L&L large cake carrier in my wish list instead.

Good morning Witchen Kitchenette Ladies!
On this Thankful Thursday, I am thankful for a warm home and pray for those who are not as fortunate and are suffering in these cooler temps. Breaks my heart.
I get emails from a blog called Life, Love and Sugar and was notified yesterday that the blogging world is in shock and mourning a popular blogger who died in her sleep last week. She has three children and her sister has pledged to continue the site to help support the children (have no idea about their father but get the impression he is not in their lives). I was browsing her blog off and on yesterday and she has links to 50 Christmas candies, 50 Christmas cookies, and 50 appetizers as well as many, many other wonderful looking recipes. The blog site is Chocolate, Chocolate and More. With it getting to be that time of year-I always look at the end of the Halloween Day as the beginning of holiday season (at least the need to plan!) and thought I would share the site with you. Hope you find something there that interests you.
Now this house is not cleaning itself so I have to get busy. Have a blessed and great day everyone!
