I think Spoon bread is a slightly better name. I wouldn't consider it a 'casserole' at all! And we cut it with a knife, not spooned it out!

Cut brownie sized pieces and serve as a side.
This is it exactly @RespectLife. I don't use the size pan they call for though, mine is a 10x10 and works great as a 9x13 doesn't fit in my toaster oven.
In addition to my previous thought of adding eggs in a previous post, I may also toy with the idea of popping in a can of green chilies . . . ole baby!

I'm so glad you mentioned the Sweet Pots in the Recipe Game from our friend @adoreqvc !!
I have been wanting to try that but don't have any tequilla! I am going to trot myself to the Liquor Store on lunch and get a couple mini bottles so I can try it soon!

He was suppose to leave at 10am.
Unknown mechanical. Sitting on runway till 11.
Then they unloaded them and told them it was a bad tire. No replacement tire at the entire airport.
Now leaving at 3:30pm!!
He had lunch all planned w/ a dear friend...and the committee mtgs start at 3!
Uh oh! He said there are about 150 ppl in line at the counter trying to get out earlier.
NOT a good way to start! LOL
Had he driven...he would be there by 2 pm.
How far is Lombard from Ohare?

@ChiliPepper I really enjoy it. I don't make it often as it makes a lot but it popped into my head over night and I knew I had the ingredients so I threw it together. I think I may also try it minus the Jiffy mix and trying throwing eggs in there and making it a custard . . . hmmmmm . . .
I love corn so whatever recipes I can find (especially casseroles) work for me.
Somewhere in one of the versions I read that it freezes well. Just cut & wrap in serving size portions.
That's probably what I will do.

Oh do try it @RespectLife, it is delicious and thank goodness you can buy those airline size bottles for recipes if you don't normally have tequila in the house . . . works out so great!

The good news is once he hits O'Hare he should be fine if he can get here and on the road before rush hour (which sounds like that may not happen). 294 get very congested after say 4pm-ish? . . . Lombard is lucky to only be about 10-15 minutes off of 294, he should be relatively ok once he's on the ground.

Oh @ChiliPepper thank you so much for mentioning this as I know I will have lots of leftovers so I think it would be best to get them into the freezer while they are still more fresh if that makes sense . . . muchos gracias! ![]()
