CHOCOLATE MACAROON DAY

 

June 3 is National Chocolate Macaroon Day on the National Day Calendar. Today, we are celebrating the tasty mix of chocolate in our macaroons!  

 

Macaroons are made from shredded coconut, usually sweetened and sometimes toasted, flour, sugar or sweetened condensed milk, and egg whites. Once the ingredients are combined, the mixture is dropped by spoonfuls onto baking sheets and baked. But, since today is Chocolate Macaroon Day, chocolate is added to the batter to make a sweet sensation even sweeter. 

 

Sweet History

The macaroon originates from Italy and means means paste. When macaroons were first created it was common practice to make them with almond flour, which is much cheaper and easier to come by than coconut. Eventually, shredded coconut replaced the almond flour. Because they did not contain any flour, Jews in Italy ate them as treats during Passover. These cookies are now a traditional Passover treat in Jewish households throughout the world. 

 

Macaroon seem more like a cake than a cookie. In fact, one of the very first mentions of the macaroon in America was in a cookbook called, “Mrs. Esther Levy’s Jewish Cookery Book” in 1871. The cookbook was the first Jewish cookbook published in America. The cookbook had no category for cookies, so the macaroon recipe was placed in the cake chapter.  

 

In 1903, macaroons appeared in another cookbook under a recipe for “coconut kisses.” Around this time, coconut had become a symbol of success to Jewish immigrants from Eastern Europe. Just as macaroons were a Passover treat in Italy, they had become the same for Jews in America. Today, these cookies aren’t just a favorite for Jewish Americans, but all Americans. In fact, macaroons made one popular website’s top 16 list of “All-time Favorite Cookies.” 

 

Today, macaroons are enjoyed by people in many countries across the globe.

Chocolate Coconut Macaroons dipped in chocolate

 

Chocolate Coconut Macaroons

 
 
These Chocolate Coconut Macaroons are easy to make, only 10 minutes of prep time and a few ingredients! They are soft, rich, and scrumptious!
 
Prep Time: 10 minutes 
Cook Time: 20 minutes 
Total Time: 30 minutes 
 
Servings: 20 cookies
 

Ingredients:

 

Chocolate Coconut Macaroons

    • 2/3 cup chopped chocolate or chocolate chips (4 oz.)
    • (1) 14 oz. can Eagle Brand Condensed Milk
    • 1 large egg white
    • 3-1/2 cups finely shredded coconut 14 oz
    • 2 teaspoon vanilla extract
 
  • 1 cup chopped chocolate or chocolate chips (170 grams, 6 oz)

Instructions:

 

Chocolate Coconut Macaroons

  • Pre-heat the oven to 325ºF. Line two baking sheets with parchment paper or silicone mat.
  • Melt the chocolate in a bowl, add the Eagle Brand Condensed Milk, egg white, coconut, and vanilla, and mix until incorporated.
  • Use a spoon or a cookie scoop to form mounds of the mixture and place them a couple of inches apart on the baking sheet.
  • Bake in the pre-heated oven for 18 to 20 minutes, until set.
  • Once the macaroons cool down, dip them in the remaining melted chocolate if you wish. You can also drizzle some chocolate on top.

Storage:

 

  • Store the macarons at room temperature in an air tight container for up to 3 days.
 

Notes:

 

*Use finely shredded coconut to obtain a smoother looking cookie.
 
** Sweetened coconut will make the macaroons sweeter and more moist. Now with unsweetened coconut, less sweet and they will have a drier texture.
 
***To make this a fun Easter recipe, use the back of a teaspoon to form an indentation on the scooped cookies before baking. Then immediately after baking, place some Easter egg chocolate candies on top of the cookies.

You are very welcome! I have enjoyed so many of yours also. As a matter of fact, there are a couple I need to go back to & print off.

 

This macaroon recipe is an easy/cheater one. I'm sure there are others out there that are more "authentic". Sometimes I just want a little sweet somethin' somethin" & a half/quarter recipe of these would be perfect!

I used to make them all the time!  Honestly, I liked Wegman's bakery macaroons better than mine.  ha ha
